Vegetarian Help

Sooo we are going to try to do a major food makeover in our house. God has been teaching Chris and I some truths about food and my friend Jill Samter is also teaching me a ton.

We would have never thought in a million years that we would become vegetarian but we strongly feel this is what God is asking us to do right now. I know some of you are now going to think we are crazy. It will take a while I'm sure to make the transition 100% but for now we are going to do the best we can in our home.

Anyway, I would love some help from any of you that are vegetarian. Can you please share recipes, blogs, hints or anything else you can to help make this transition easier for us?

If you have changed to eating this way and seen a difference with asthma, ADHD or other health issues can you tell me about it?

If you want to learn some hidden truths about food check out my friend Jill's blog.

I've read some of Jill's writings too and know that her way of eating would be much healthier but the process of getting there when we are so hooked on unhealthy foods seems overwhelming to me! Good for you for trying to improve your diet...I'd love to hear how it goes for you!!

I try to have 1 vegetarian meal a week -for health and frugalness. :) Any more than 1 meal a week and my die-hard carnivore hubby would freak out!

check out this mom's blog -http://themourofamily.blogspot.com/...she put together many family recipes in her own e-cookbook..it's not all vegetarian, but she does have a whole section on it. I bought the cookbook over a year ago and make 1-2 recipes of hers every week -easy, cheap, and kid friendly.

the big issue w/vegetarian is to get protein in....lentils and quinoa are a relatively cheap and yummy protein source. :)

We usually eat at least one vegetarian meal a week...I've got a yummy lentil recipe that even my kiddos will eat happily! I'll e-mail it to you. It's super easy, very healthy, and incredibly cheap! If you lived next door, I'd make some and invite you over for dinner? :) Ready to move yet?

We have trouble with low blood sugar and do not find that vegetarian meals keep our blood sugars up. HOWEVER, we do know that getting rid of chemical laundry soaps and body products has helped our health, including our one son's hyper-activity.
